Paco Pérez is the soul of haute cuisine in the Mar d'Amunt, a unique territory where the sea and the mountains merge in a unique landscape that stretches from Cap de Creus to Cap Cerbère. His cuisine, rooted in this land of contrasts, pays tribute to its essence through a culinary proposal that combines tradition, creativity and avant-garde.

Together with Montse Serra, his wife and Maître of the restaurant, Paco Pérez runs Miramar, a space with history that in its beginnings was a simple house of meals with rooms. Founded in 1939 by Montse's grandparents in the heart of Llançà, this restaurant has evolved to become a gastronomic reference on the Costa Brava, where excellence, sensitivity and passion for the product mark each dish.

The figure of Montse Serra transcends her role as Maître d': she is the visible soul of the dining room and an essential accomplice in the Miramar experience. Her sensitivity, discretion and deep knowledge of the rhythm of service give the dining room a harmony that dialogues with the cuisine of Paco Pérez. At Miramar, hospitality is an extension of the landscape and memory, and Montse - with her team - turns each service into a precise and close choreography, where the diner feels welcomed and accompanied.

In 2021, Montse Serra receives the Juli Soler i Lobo Award, at the Premis G! gala organized by the Patronat de Turisme Costa Brava Girona, for her work as Maître at the Miramar. In 2023, he received recognition for his career at the Comer La Vanguardia Awards gala, presented by Cristina Jolonch at the W Barcelona hotel. In 2025, he received the National Award for Head Waiter at the XXVII Edition of the National Gastronomy Awards, granted by the Catalan Academy of Gastronomy and Nutrition.

Miramar, the nerve center and home port of Paco Pérez's gastronomy, has held two Michelin Stars since 2010, consolidating its position as a culinary benchmark on the Costa Brava. Enoteca, Paco Pérez's restaurant at the Hotel Arts in Barcelona, has also been awarded two Michelin Stars.

In addition to these awards, both Miramar and Enoteca have three Repsol Suns, reflecting the quality, creativity and passion for detail that define the chef's cuisine. These awards are proof of the constant effort and dedication with which Paco Pérez and his team work day after day.

In 2024, the chef adds a new achievement to his prestigious list of honors. His restaurant Arco in Gdańsk, Poland, is awarded its first Michelin star, adding a fifth star to those already earned.

This recognition reinforces the vision of Paco Pérez as an internationally renowned chef, capable of creating exceptional gastronomic experiences in different corners of the world.
